Foie gras without gavage ?

I first heard of Eduardo Sousa's foie gras in Dan Barber's 2008 TED talk, in which Dan tells the audience of the day he met Eduardo, who claimed to make "natural foie gras" :

This story now has an update, told by Dan to This American Life this december, in the episode "Poultry Slam 2011" which you can listen to for free at thislife.org. It seems that Dan Barber tried to use the same technique to raise geese on his own farm in upstate New York, with mixed results, to say the least.
